Carrot Cake

Ingredients

Cake

  • 4 large eggs
  • 250g vegetable oil
  • 200g white sugar
  • 215g brown sugar
  • 3 tsp vanilla extract
  • 14 tsp nutmeg
  • 240g flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 12 tsp salt
  • 3 tsp cinnamon
  • 2 cups grated carrots

Frosting

  • 113g (1 stick) butter, softened
  • 227g (8oz) cream cheese
  • 400g powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350℉
  2. Grease and flour two 9’ round pans
  3. In a large bowl, beat together eggs, oil, sugars, and vanilla. Mix in remaining ingredients. Pour evenly into pans.
  4. Bake for 40-50 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then turn out and cool completely.
  5. In a stand mixer, beat all frosting ingredients together until smooth. Frost the cake once completely cooled.
