Carrot Cake
Ingredients
Cake
- 4 large eggs
- 250g vegetable oil
- 200g white sugar
- 215g brown sugar
- 3 tsp vanilla extract
- 1⁄4 tsp nutmeg
- 240g flour
- 2 tsp baking soda
- 2 tsp baking powder
- 1⁄2 tsp salt
- 3 tsp cinnamon
- 2 cups grated carrots
Frosting
- 113g (1 stick) butter, softened
- 227g (8oz) cream cheese
- 400g powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350℉
- Grease and flour two 9’ round pans
- In a large bowl, beat together eggs, oil, sugars, and vanilla. Mix in remaining ingredients. Pour evenly into pans.
- Bake for 40-50 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then turn out and cool completely.
- In a stand mixer, beat all frosting ingredients together until smooth. Frost the cake once completely cooled.
